Toasted Crumpets And Fruit



I am a student, and I hate to admit that I fit the stereotype of not being able to cook. When I lived in student accommodation for my first year of university, the microwave was my best friend, and I looked forward to the weekends so I could get home cooked food from my parents. At twenty years of age, it's a little bit embarrassing to say that you can't cook, so this summer I'm trying to learn though the help of a couple of cookbooks and my not-so-patient parents.

I started with breakfast, the most important meal of the day. I got this recipe for toasted crumpets with warm spiced berries, yoghurt and honey from The Hairy Dieters cookbook.

What you will need:


  • Crumpets (two per person)
  • 100g fat-free Greek Yoghurt 
  • 150g ripe strawberries, hulled and sliced
  • 50g of raspberries
  • 50g of blueberries
  • 2 big pinches of ground mixed spice
  • 2tsp of runny honey for drizzling


Toast the crumpets in either a toaster or under the grill until they are lightly browned. I used the grill because my toaster seems to have a mind of its own. Pop the yoghurt into a bowl and mix until it turns glossy.

Place a non-stick frying pan over a medium-high heat and add all of the fruit. Sprinkle with 2 good pinches of the ground mixed spice and cook for just a minute. Make sure to toss the fruit regularly until it is softened but still holding its shape. (Tossing the fruit didn't go so well for me, so I kind of just mixed it around with a spoon).

Pop your crumpets on a plate and spoon the fruit over the top. Add the yoghurt and drizzle with honey to top it all off.
